Ingredients:

  • 2 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts, cubed
  • 2 cans (15 oz each) white beans (such as cannellini or Great Northern beans), drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 2 cans (4 oz each) diced green chilies
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp ground black pepper
  • 1/2 tsp cayenne pepper (optional, for heat)
  • 1/2 tsp smoked paprika (optional, for a smoky flavor)
  • 1/2 cup sour cream
  • 1/2 cup heavy cream or half-and-half
  • Juice of 1 lime
  • Salt, to taste

For Garnish:

  • Fresh cilantro, chopped
  • Shredded cheese (Monterey Jack or cheddar)
  • Sliced avocado
  • Tortilla chips
  • Sour cream
  • Sliced jalapeños (optional)

Instructions:

  1. Sauté the Aromatics:
    • Heat olive oil in a large pot or Dutch oven over medium heat.
    • Add the diced onion and cook until softened, about 3-4 minutes.
    • Add the minced garlic and cook for another minute until fragrant.
  2. Cook the Chicken:
    • Add the cubed chicken to the pot. Cook until browned on all sides, about 5-7 minutes.
  3. Add the Flavorings:
